Cook II
University Dining Services
Position
Under the general supervision of the Executive Chef, the Cook II will be responsible for ordering, production, dispensing, and monitoring of high quality food items per a defined menu cycle. The incumbent will prepare and cook soups, sauces, entrées, side dishes, desserts, and breads from both scratch and preprocessed foods; be responsible for the care, maintenance, and sanitation of culinary and service equipment; be responsible for a clean and organized work areas based upon health and safety guidelines; participate in the instruction, training, and supervision of students in job skills, safety and sanitation; plan menu; maintain records; solve work problems; attend and participate in weekly staff meetings; to ensure food safety, follow health and safety guidelines based upon HACCP, Serve-Safe/Cal Code, and Sonoma County Health Department regulations; keep accurate records in connection with orders, production, and time and temperature reporting; follow established procedures regarding the security of products, equipment, and cash within the Dining facility; and interact with students, staff, customers, and guests in a manner that promotes positive public relations. Based upon the needs of the Director of Dining Services, or their designee, the Cook II may perform other duties, as assigned, and as deemed necessary for the effective operation of University Dining Services. Additionally, the Cook II may assist in the cleaning of facilities, reorganization of storage areas, and assist in any open operation within the Dining Services. The incumbent is part of the Dining Services Team that supports the core values and the mission of the Division of Administration and Finance and that of Sonoma State University. Early morning, swing or evening shifts may be required and will be specified by the supervisor to meet operational needs. Scheduling may include the working of holidays.
Qualifications
Requires the equivalent to two years of experience performing duties of a Cook I which may include assisting in the preparing, cooking, and dispensing of food, OR the equivalent to three years of experience as a cook in one or a combination of the following: (1) Preparing meals for at least 250 persons a meal with experience at the various stations; or (2) personally preparing complete breakfasts, lunches, and dinners for approximately 50 or more persons a meal. Previous experience supervising and training unskilled and semiskilled workers is preferred. The incumbent must possess working knowledge of producing food in varying quantities and adjusting recipes or methods to produce a quality product; the ability to project and produce food quantities based upon customer counts; working knowledge of kitchen safety and sanitation based upon HACCP principles and Health Department Laws; knowledge of food values as well as nutritional and economical substitutions within food groups and food accounting; and excellent communication skills, both written and oral, are essential to position.. The Cook II must possess the ability to prepare and cook all food groups and use the appropriate equipment; judge food quality; follow guidelines; plan work schedules; prepare foods based upon an established menu; keep organized; maintain accurate records; utilize basic mathematic skills; handle multiple food orders while prioritizing cooking times; accept criticism and feedback and work towards incorporating this feedback into improving job tasks; work in a stressful environment; participate cooperatively on a team and actively resolve conflicts; be committed to a high standard of safety and willing to report safety violations to the appropriate staff; establish and maintain excellent relationships with a diverse population; and maintain regular and acceptable attendance and punctuality. The incumbent is expected to pass both the Serve Safe examination, with a score of 85% or greater, and a physical examination. The position requires the ability to lift and carry an average of 75 lbs; stand for extended periods of time, often for full shift; use fingers, hands, arms; bend, kneel, and reach; and work in a close environment with high temperatures.

Salary and Benefits
The salary range is $2,693 to $4,039 a month. Starting salary placement will not exceed the beginning of the range. This is a full time, non-exempt position, which will lead toward permanent status following the successful completion of a probationary period.
